Spoon Bread is an old recipe from Tennessee for a type of bread corn bread baked in a casserole. Pink Flannel Hash uses tuna, potatoes, eggs, etc. for a quick meal, a low cost. So go ahead, let try these recipes to help you save money on travel at the grocery store.

OVEN HAMBURGER COOKIES

This recipe is taken from an old cooking book community in southern Indiana where he was born and raised.

1 pound ground beef
1 / 2 cup chopped onion
1 can condensed vegetable soup
1 / 2 tablespoon oregano
pinch pepper
1 can refrigerated biscuits
1 / 2 cup sour cream
1 / cheese 2 cups grated cheddar

Preheat oven to 400 degrees.

In a large skillet fry the ground beef cooked onion until meat is browned and onion is tender, drain well to remove grease. Stir in can of soup, and oregano pepper and heat until boiling. Pour the mixture into a saucepan 2-room that has been buttered. Cover with biscuits. Bake at 400 degrees for 15 minutes. Remove from oven. Spread sour cream over the cookies, then top with cheese. Return to oven and bake another 10 minutes.

SPOON BREAD

This is an old recipe from the hills of Tennessee.

2 cups white cornmeal
2 1 / 2 cups water boiling
1 1 / 2 tablespoons melted butter
1 1 / 2 teaspoon salt
2 egg yolks beaten
1 tablespoon coffee soda
1 1 / 2 cup butter
2 egg whites beaten

Preheat oven to 375 degrees.

Add cornmeal slowly into boiling water. Let stand 3 minutes. Add butter mixture to the cornmeal. Add salt, egg yolks, baking soda and butter. Fold egg whites into a baking dish greased. Bake at 375 degrees for 40 minutes.

PINK FLANNEL HASH

It was an old recipe clipping I found in a recipe box of my deceased mother. I no idea where it comes from this cup.

1 / 3 cup butter or margarine
1 cup chopped onion (1 large)
2 cups red pepper finely chopped
1 tablespoon salsa / 2 teaspoon Tabasco
Southern Idaho 2 cups frozen-style hash brown potatoes
1 can (6 1/2-7 ounces) tuna, drained and shredded
4 eggs

In a large skillet, melt butter, sauté onion and peppers until tender crisp. Mix Tabasco sauce and potatoes. Cook over medium heat, stirring frequently until potatoes are tender and golden (approximately 15 minutes). Add tuna. Make four wells in the potato mixture to break an egg into each well. Cover and cook 3 to 4 minutes or until eggs. Garnish with fresh parsley.

Makes 4 servings.
